Being Spanish speaking and living in Texas can be challenging. You may think it is quite the opposite because so many people speak Spanish here but... There is a new reality called Spanglish that forces us to adapt to some new uses of our own language and some "new words" that sometimes feel like real treason to the language I love and worship. May Cervantes forgive us all.

Salsa verde de tomatillo [y roja de tomate] - Green tomatillo salsa
Sometimes Mexican restaurants are criticized for not serving real Mexican cuisine but Tex-Mex. And I agree but folks, Tex Mex is delicious. So if you happen to find yourselves at a no-so-Mexican restaurant, sit back and relax and get ready for fantastic comfort food inspired by the most original fusion cuisine. And get ready to dip. Because this is Salsa territory.

Salmon patties with cilantro and Dijon mustard - Hamburguesas de salmón
It took me 3 months to be able to post content again. My old computer died and I couldn´t get myself to buy a new one here in the US because I would lose the letter Ñ in my keyboard for which I was not prepared. It is not such a big deal, you may think, but it is for me because I am from Spain, España in Spanish, en español. And my letter Ñ is part of who I am. It is not patriotism, or maybe a little, it is just that I cannot express myself without it. I found a little keyboard shortcut though so I can type as much as I want. It´s my Ñ and I'll type it if I want to.
