Time is of the essence

http://www.woodwatches.com/#tengounplanbeatriz
I am pretty sure I got it from my father. He has never been late in his entire life. Well, maybe once, and because he was with me in the car that took me to the church on my wedding day. But just that one time. He must have mentally prepared without the rest of the world knowing because I didn't notice him being particularly nervous or looking at his watch more than the usual 10 times per minute. He was in control.
I know all this because I am the exact same. When I have an appointment with somebody or have somewhere to be at a specific time I start worrying about all the things that could happen and get in my way and make me be late. So I need to plan ahead all the necessary steps to get me to my destination on time (this usually means 15 min early).

Being like this is just fine. Everybody has their own kind of crazy stuff going on and that's just okay. I am a time control freak and I plan accordingly, nothing wrong or weird about it. The problem comes when I turns into I+kids. Yes folks, when you add kids to the equation there is no planning accordingly. There is no planning at all. Besides the planning for saving for a therapist that will help me control the cumulative anxiety of not being able to be on time never, ever, ever getting bsck together again. If you are a laid back about punctuality kinda person you won't be able to understand what it's like to be like me.
But I'm sure you will understand that, for someone like me, who tends to look at her watch I-don't-even-know-how-many-times-a-day, it is very important to have something pretty to look at. Something that makes you feel good in the middle of the chaos of being late. Or something that makes you proud of being already there when it isn't time yet. This is why my watch is a key accessory for me. It has to be precise, beautiful, stylish and it has to reflect my personality or the stage of life I find myself into at the moment.

I recently discovered JORD watches. Not only are they all of the above but they are also made of wood! Real wood in the bracelet and the case. Mine is sandalwood. Isn't that amazing? And this connects perfectly with my inner quest for a more natural lifestyle lately. They have many different designs and it was hard to pick one! I decided on the Frankie Dark Sandalwood and Smoke because after several years of a white crystal I wanted to try something dark.
The good news for you is that at JORD watches they are having a giveaway for all the people reading this. If you click on the link below you can enter the giveaway for a $100 discount on one of these unique watches. And if you don't get lucky you still get lucky because there is a $25 discount for everyone participating in the giveaway. All you have to do is click HERE and enter your email. Is that simple. Good luck! You have until 06/11/2017 to participate.

He descubierto los relojes JORD y me encantan.

Grilling is a big thing in America. Well, I don't know about America in general but it is for sure a BIG (as everything else is) thing in Texas. There is literally no home in this great state of Texas without a grill. Gas, charcoal or electric, if you don't grill you are not allowed in the State. Add that one to the list of requirements Trump is creating for us foreigners to be allowed to stay here. So I am totally INTO the grillin' thing. And I have proof.

Pastel de Lima y Coco - Total Coconut and Lime cake

There is so many good things about birthdays... How come I don't seem to be able to find them? It's like this all getting old thing is supposed to be awesome because it means you suddenly have all the wisdom blooming out of you like enlightnening everyone, sort of... But I am not there yet. I am in that middle age stage where my kids, far from admiring me as if I was freaking Kung-Fu wise (I am referring to David Carradine Kung Fu here, not Kung Fu Panda. Please. NOT.) only see me as a potential grandma for their dolls. This is why I find birthdays can get tricky at my age. But hey! let's have cake and make everything be better.

I have survived three long distance flights, with a stop, and with 2 kids, being the only adult in charge. So now all I can think of is checking-in into a retreat facility with white walls and water sounds. And all the recipes I am capable of are simple. Very simple. Yet very tasty. Few steps, and very few ingredients. And lots of flavor.

Thanksgiving two ways: at the Trumps they will hold hands and be thankful for the world being crazy enough so people though that only a crazy person could save it. At the Clinton's they will go more for the classic "at least we can give thanks because we are healthy" approach. Anyways, we all have many things to be thankful for and I find this Holiday so inspiring and happy. I am so excited about it and I am thankful for the good friends I have made in this country. Happy Thanksgiving!

I came across this recipe in the NY Times a few weeks ago. It felt so refreshing finding something other than Donald Trump's racist comments, Donald Trump's sexist comments, Donald Trump's Mexican border walls, and Donald Trump's sexual assaults that I was instantly in love not only with the recipe but with the fact that I was going to be able to keep reading the NY Times and not feel disgusted but quite the opposite. So hear me out, keep digging, there is more in the press these days than horrifying stories about powerful people. There is amazing tarragon chicken and shallots.

Being Spanish speaking and living in Texas can be challenging. You may think it is quite the opposite because so many people speak Spanish here but... There is a new reality called Spanglish that forces us to adapt to some new uses of our own language and some "new words" that sometimes feel like real treason to the language I love and worship. May Cervantes forgive us all.

Pues no debería. Ojito.

Sometimes Mexican restaurants are criticized for not serving real Mexican cuisine but Tex-Mex. And I agree but folks, Tex Mex is delicious. So if you happen to find yourselves at a no-so-Mexican restaurant, sit back and relax and get ready for fantastic comfort food inspired by the most original fusion cuisine. And get ready to dip. Because this is Salsa territory.

Salmon patties with cilantro and Dijon mustard - Hamburguesas de salmón

It took me 3 months to be able to post content again. My old computer died and I couldn´t get myself to buy a new one here in the US because I would lose the letter Ñ in my keyboard for which I was not prepared. It is not such a big deal, you may think, but it is for me because I am from Spain, España in Spanish, en español. And my letter Ñ is part of who I am. It is not patriotism, or maybe a little, it is just that I cannot express myself without it. I found a little keyboard shortcut though so I can type as much as I want. It´s my Ñ and I'll type it if I want to.

Are you 40 years old yet? If you aren't consider yourself warned about what will happen to your eyes the morning right after you turn 40. Yes, it is that sudden. Overnight your eyes will start working against you. Or will start NOT working. At all. It is as if the over the counter reading glasses at Target had been waiting for your birthday to be the gift you will most need. I have been able to manage for the past year but I am already 41 and the reading glasses are going to be my best friends from now on (diamonds are not jealous friends so I guess I can have both)

When coming to live in the US from a different country you have to change a lot of things in your life. It is all about adapting to the new reality, which includes adapting to the new grocery shopping reality. Back in Spain I would have never been able to enjoy blueberries at the reasonable price they have here. But what is tearing me apart is having to give up my oranges. My gorgeous sweet delicious Valencia oranges at 0.89Eur/kg. It makes me homesickjust to think about it.

Spain's best kept secret has nothing to do with some pictures of the former king naked in a yatch that never made their way to Spanish press covers. Generation after generation, Spanish children have been revealed this secret which they have sworn to keep for years only to pass it on to the following generations once they became adults. This secret is no other than the gamusino hunt.

Baba ganoush con chips de berenjena a la miel {pan con pan}

I may be a food blogger but sometimes my gourmet side takes a nap and therefore I have to admit here and now that I am totally ok with eating the same leftovers for 4 days in a row. This is why I never learned to plan and calculate correct amounts of food. And there is also this thing that I have for non-sophisticated combinations... One of my favorites is potato salad on potato chips. Terrific. My other favorite is this recipe that I bring you today: mashed eggplant with eggplant chips.

Pollo asado con vino blanco y hierbas aromáticas - Roasted chicken in dry wine and herbs

Sometimes you think you know something and it turns out you had no clue. I thought I knew what a storm was like. Until two days ago. Texas storms are nothing like Madrid storms. It is not just rain and thunder and lightning and traffic jams. It is rain, and thunder, and lightning non-stop for more than 12 hours, no school for 3 days, and when you finally make it to the grocery store it is empty. Like in post-nuclear empty. Now I really know what "storm" means around here.

Today I want to talk to you about the elfs. Yes, those elfs that seem to live in most homes without distinction of nationality, hemisphere or race. We had them in Madrid and they even came with us when we made our way over the ocean to America. In case you haven't heard of them, these little elfs are usually the those creatures to whom husbands and children attribute the ability to change the empty toilet paper roll during the night while they are sleeping. That is the reason why they never change it to a new one. Because of the elfs that show up during their sleep to change it so they will wake up to a new shinny white paper roll. I tried to stay up all night once to catch them but they decided not to show up in that ocasion so I had to change the roll myself. Wait, that was not just once. It might have happened twice... Or maybe three... four times?... Oh God, I think I am an Oompa Loompa.

Croquetas de pollo y espinacas con salsa romesco - Roasted chicken and spincah croquettes with romesco sauce

There are times when you have to make a virtue of necessity. This recipe comes from one of those times. Croquettes are one of the most popular tapas in the Spanish (Spaniard) gastronomy. There is no tapas bar without them. And among popular croquettes, jamón croquettes are top of the list. So here came the necessity: there is no jamón in the US. (Come on FDA, seriously?). So I had to come up with an alternative and I am quite pleased with the results. These are not jamón croquettes but roasted chicken leftovers and spinach croquettes are second best! And if you dip them in the most flavorful romesco sauce, these croquettes can run for president.

Costillas barbacoa en slow cooker - Slowcooker bb-q ribs

Estoy a dieta.

I am on a diet. It is already pool time in Texas and I have been caught in the middle of Easter eggs and NOLA beignets. And I need to fix that. And my parents are coming to visit from Spain! And I am looking forward to get fat again on all those home made specialties that they are going to be cooking for me. Paella, croquettes, meatballs, omelette, gazpacho... Because yes, that's what they're here for right? to feed me. In return I will make some old Texas classics for them. How do bb-q ribs sound?

Through my life I have experienced times when I felt super strong. Strong like in being capable of tearing que phone book in two. And I also have experienced a lack of energy and strengh that made a cotton ball feel as heavy as the whole Earth. I still feel weak easily which I expect to keep happening until my kids go to college. But in order to feel strong like in superhuman strong I have relied on superfoods like this one that I bring you today. It fills me with tons of energy and it is probably one of the most deliciuos things I have ever prepared. It's not called SUPERfood for nothing.

Bocaditos rápidos de lemon curd - Lemon curd mini-hand pies

Ya he vuelto.

Being back home after a road trip vacation is sad because of the "vacation is over thing" but it also feels great. Especially when you get to sleep in your own bed again. There is nothing like one's bed. Or maybe the bed has noting to do with the good rest and all the credit must be given to the fact that after the long drive and before being able to rest my head in my pillow I had to unpack and do laudry. Three rounds of laundry. I did not try to lay down on the kitchen floor but it is pretty likely that I would have fallen asleep like a baby there too.

After a few trial and error attempts I have come to a blend of ingredients that is my new go-to basic stir fry sauce. It can be adapted to your mood by spicing it up with different choices (more chilli pepper flakes, jalapeño, ginger, paprika, mustard, lime juice...) or to the protein of your choice. Shrimp or chicken work better with citrus sauces to my taste.
